Our Breeds
Three Breeds, One Standard of Excellence
Every pig at Dudley Farms is raised with the same care — but each breed brings something uniquely its own to the table. Meet the animals behind the pork.
The Gold Standard of Pork
Berkshire
Berkshire pigs are widely regarded as the finest pork breed in the world — often called the "Wagyu of pork" for their extraordinary marbling, depth of flavor, and melt-in-your-mouth tenderness. Originating in Berkshire County, England, this heritage breed has been prized for centuries by royalty, chefs, and discerning food lovers alike.
At Dudley Farms, our Berkshires roam freely on lush pastures, developing the intramuscular fat and rich flavor that sets them apart from any commodity pork. The result is a darker, more complex meat with a sweetness and depth that speaks for itself — whether you're grilling chops, slow-roasting a shoulder, or curing your own bacon.
Breed Characteristics
Flavor Profile
Rich, sweet, and deeply savory with exceptional marbling. Darker in color than commercial pork. Ideal for chops, roasts, and charcuterie.
Lean, Clean & Consistently Excellent
Yorkshire
Yorkshire pigs — also known as Large White — are the most widely raised breed in the world for good reason. They produce lean, mild, and consistently high-quality pork that is the backbone of everyday cooking. Clean in flavor, versatile in the kitchen, and reliable in quality, Yorkshire pork is the workhorse of the premium pork world.
Our Yorkshires are raised on open pasture with the same care and attention we give every animal on the farm. The result is pork that's noticeably better than anything you'll find at a grocery store — leaner, cleaner, and more flavorful — while remaining approachable and versatile for families and home cooks.
Breed Characteristics
Flavor Profile
Mild, clean, and lean with a delicate sweetness. Light pink color. Ideal for everyday cooking, grilling, and family meals.
Bold Flavor, Tender Texture
Duroc
Duroc pigs are an American breed known for their striking reddish-brown coat and exceptional eating quality. Their meat is darker, richer, and more intensely flavored than most breeds — a characteristic that comes from their unique genetics and the way they develop intramuscular fat. Duroc is a chef's breed: bold enough to stand up to strong preparations, tender enough to shine simply seasoned.
At Dudley Farms, our Durocs are raised on pasture and fed a natural diet that enhances their already-impressive flavor. The result is pork with a deep, almost beefy richness that makes it ideal for slow cooking, smoking, and any preparation where you want the meat to be the star. Once you've tasted Duroc, it's hard to go back.
Breed Characteristics
Flavor Profile
Bold, rich, and intensely savory with a hint of sweetness. Darker red color. Ideal for smoking, slow cooking, and bold preparations.
